Fix: Signaturen-Tab lädt erste Identität automatisch

- "Bitte wählen" Placeholder entfernt
- Erste Identität wird beim Laden direkt ausgewählt
- Signatur wird sofort in den Editor geladen (kein manuelles Umschalten nötig)
